I have been slowly developing an English IPA to be part of my signature series. This is an overhaul from other recipes, with the intent of trying to add depth of flavour by layering in different malts. Ingredients
- 1 lb 4 oz Maris Otter (1.8L)
- 4 oz flaked barley (1.4L)
- 3.4 oz Maris Otter (3.8L)
- 3.3 oz Pilsner malt (2L)
- 2 oz Carastan malt (30L)
- 2 oz Rye malt (3.5L)
- 1 oz Crystal Malt I (45L)
- 1 oz Dark Crystal malt (85L)
- 1/4 Campden tablet when preparing strike water (optional)
- 0.2 oz Pilgrim hops at 30 minutes
- 0.1 oz Cascade hops at 30 minutes
- 2 oz Turbinado at 20 minutes
- 0.2 oz Minstrel hops at 15 minutes
- 1/4 tsp Irish Moss (optional) at 15 minutes
- 0.2 Minstrel hops at 10 minutes
- 0.2 Minstrel hops at 5 minutes.
- 5 ml Nottingham dry ale yeast
- 0.2 oz Cascade hops after 5 days
- 0.2 oz Cascade hops after 7 days
- 0.2 oz Cascade hops after 9 days

Brew Day
- Prepare 4.7L strike water at 149F.
- Add the milled grains to the bag.
- Place the bag in the hot water, set the timer for 90 minutes, and maintain the temperature at 149F.
- It is acceptable if the temperature varies a little.
- Stir occasionally.
- With approximately 15 minutes remaining, heat 2L of sparge water to 170F.
- Calibrate the refractometer, aka the sonic screwdriver.
- Lift the bag out of the water, and allow it to drip into the pot. Every bit of sugar that can be extracted will benefit the end ABV.
- Pour the sparge water over over the grain bag, this should help extract even more sugar
- Bring up to a boil, 212F, set the timer for 30 minutes. Add hops, sugar, and Irish moss, as prescribed above.
- Sanitise everything required for fermentation.
- Cool to room temp, an ice-bath or a snowbank work effectively.
- Prepare the yeast mixture.
- Pitch the yeast to the carboy.
- Transfer the wort to the carboy, splash the wort around to aerate the contents.
- Put the airlock on the carboy.
- Store in a cool dark place for primary fermentation for 10 days.
Fermentation Duration
- Add the hops to the carboy as prescribed above.
- This will add a lot of extra goo (I believe that is the technical term) buildup to the carboy, it may or may not settle out.
Bottling Day
- Detailed instructions.
- Prepare 0.8 oz corn sugar.
- Bottle condition at least 4 weeks.
Brew Notes

- Rye isn’t normally part of an English IPA grainbill, but I like the little bit of bite it adds, a nice fit with an IPA.
- This batch is the first in my Evolution Series 2025 of IPAs.
- As with most of my helter-skelter recipes, look at the odd values, and compensate if you are going to follow this recipe.
- There was a small boil over while the wort was unattended, 100 ml of water added.
